Setting up a small Church TV studio

I am currently in the process of setting up a small 2 camera TV recording studio in a church. I am currently looking for some software that will run on fedora 18. I will be going from a Panasonic digital 5000 camera (analogue, I know) to my pc running fedora 18.

My input will be from a bnc connection on the camera to an S-video input on the pc. I am looking for some software that will allow me to record this signal.

I am a BIG open source fan. So if there is some software like this out there, any recommendations will be appreciated.
